Yours to Enjoy, Judy Pineapple Upside Down Mini Cakes 1 box Yellow Cake Mix 1 T. Pineapple Extract Mix cake up according to the directions on the box and stir in Pineapple Extract. 1 20 oz can of Pineapple Tidbits(in their juice), drain, but save the juice - (you will have a few tidbits leftover) 12 Pyrex Custard bowls - http://www.amazon.com/Pyrex-Bakeware-6-Ounce-Clear-Custard/dp/B0000CF3UK Spray the Custard Bowls with a cooking spray. Set the Custard Bowls onto a large baking sheet. Put in 7-10 tidbits into the bottom of each dish. Pour the cake batter 3/4 full in each custard cup. Bake for 30-35 minutes at 350 degrees. Check with a fork for doneness. Take out of the oven. While cakes are baking, put the pineapple juice into a small pot and add 2 T. of sugar. Heat and stir until sugar is melted, about 3 minutes. Turn off the burner and let it set until cakes are done. Pour about 2 T. of this mixture over each mini cake and leave in the custard dishes to cool, dividing all the pineapple liquid between the mini cakes. When cool, you can invert and serve the cakes.
