Guest guest Posted February 10, 2009 Report Share Posted February 10, 2009 I cook cornmeal mush in the microwave--roughly 2-3 parts water to 1 part cornmeal, add a pinch of salt, cook on high for 60-90 seconds, stir, add a little lump of butter, and cook 60-90 seconds more. taste to make sure it tastes done, and enjoy. If you are fixing this for three people, you may need to experiment with longer times in the microwave, but it is definitely faster than most other hot breakfast dishes. sue in st louis (you can also put cheese on top and let it melt during the second time you microwave it.)
