I sauteed onions and garlic in olive oil, added celery, carrots, potatoes, turnips, parsnips, cabbage, swiss chard, canned diced tomatoes, canned navy beans (drained), and vegetable broth. when the potatoes, parsnips, and turnips were almost tender, I added a diced yellow squash, and a handful of fresh baby spinach and cooked a few minutes more (i don't like to cook my soups long...i like my veggies to not be mushy). i seasoned with salt and pepper. it was a good soup and the chard stems (i used the red ones) added a nice red color to the soup. i will also post a recipe for a chard and goat cheese tart i have made before. susie --- glpveg4life wrote: > I bought some rainbow chard and some baby spinach > today, any one have > suggestions on cooking these? > > I also have parsnips, onions and garlic to add to > the mix. > > Gayle > **************Who's never won?
