Guest guest Posted February 7, 2009 Report Share Posted February 7, 2009 I love Migas, which is a Tex-Mex egg/breakfast dish. I make it often. If I make hash browns to go with, I like to make a breakfast burrito (flour tortilla filled with migas, potatoes and salsa.) Migas is really good served in corn tortillas with fresh salsa. I save the crumbs from the bottom of a bag of tortilla chips to use for Migas. Migas 1 T. butter 1/2 small onion, finely chopped 1/4 bell pepper, finely chopped 1 jalapeno or serrano, seeded and finely chopped 4 eggs 4 tsp. water 1 to 2 T. salsa grated cheese (cheddar, monterey jack, or pepper jack) tortilla chips (you can use stale ones), roughly crushed (they don't nee to be finely crushed) fresh corn or flour tortillas (warmed) Melt butter in a (you can use non-stick) pan over medium heat. Add onion, bell pepper, and chile and saute until tender. Meanwhile, crack eggs into a bowl, add the water and salsa and mix well with a fork. When veggies are tender, add the egg mixture and stir well. Continue to move egg and veggie mixture with spatula (or whatever tool you are using). When the eggs are almost set, but still a bit runny, add about a handful of crushed tortilla chips. Mix into the eggs. When eggs have set, add a handful of grated cheese and mix in well.
