Guest guest Posted February 2, 2009 Report Share Posted February 2, 2009 HONEY BUN CAKE 1 (18.25-ounce) package yellow cake mix with pudding 4 large eggs 2/3 cup vegetable oil 1/3 cup water 1 (8-ounce) carton sour cream 1/2 cup firmly packed brown sugar 1 tsp. ground cinnamon 2/3 cup chopped pecans Powdered Sugar Glaze (below) Combine first 5 ingredients in a mixing bowl; beat at medium speed with an electric mixer 2 minutes. Set aside. Combine brown sugar; cinnamon, and pecans; set aside. Pour half of batter into a greased and floured 13x9-inch pan. Sprinkle half of sugar mixture over batter. Repeat procedure with remaining batter and sugar mixture. Gently swirl batter with a knife. Bake at 350 degrees F. for 35 minutes or until a wooden pick inserted in center comes out clean. Remove from oven. Drizzle glaze over cake, and cool. Cut into squares. Yield: 15 servings. POWDERED SUGAR GLAZE: 1 cup sifted powdered sugar 1 tblsp. plus 1 tsp. milk 1/2 tsp. vanilla extract Combine all ingredients; stir or beat at medium speed with an electric mixer until smooth. Yield: 1/3 cup. VARIATIONS: Lemon Glaze - Substitute fresh lemon juice for milk. Orange Glaze - Substitute fresh orange juice for milk.
