Guest guest Posted February 2, 2009 Report Share Posted February 2, 2009 CARROT GINGER BREAD 2 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon salt 1 teaspoon ground ginger 3/4 cup sugar 2 eggs 1/4 cup vegetable oil 2 cups carrots, shredded Spray a 9x5x3-inch loaf pan with no-stick cooking spray. Preheat oven to 350 degrees F. Combine flour, baking powder, salt and ginger in a medium-sized bowl. Combine sugar, eggs, vegetable oil and carrots in a separate bowl. Pour liquid ingredients into dry ingredients. Mix until thoroughly moistened. Pour batter into loaf pan. Bake for 1 hour or until bread tests dine. Cool before slicing.
