Roasted mixed winter vegetables

Picked up my first CSA *Community Supported Agriculture* share

tonight, and roasted the offerings (except for the cabbage) I'll save

that for the cabbage and egg noodle recipe in the newsletter!

 

winter squash, cubed

celery root, cubed

brussels sprouts, cut into halves or quarters, depending on size,

french fingerling potatoes, cubed

yellow onions, quartered

clove of garlic, minced

 

Tossed together in baking pan with a drizzle of olive oil and baked at

400 degrees for 35 minutes. Didn't add seasonings or salt (didn't

need any). It was wonderful, and my house still smells delightful.
