Um. In my confirmation email, someone suggested I introduce myself and

explain why I wanted to join this group. I'm a fourteen year old girl,

and I have been a vegetarian for just over two years now. My family

supports my decision to not eat meat, but understandably still prepares

meat dishes for themselves. I often have to find something else to cook

for dinner, and as much as I love being a vegetarian, I need more food

choices. Basically, I joined to meet other vegetarians and get new

recipes to try. Thanks!

Way to go, Danielle, I'm proud of you! Kudos to your family as well, for not

interfering in your choice to veg out.

 

Will you be doing your cooking or someone else? It's a great opportunity to get

your family to eat more vegetables and less of the other stuff. The two

vegetarian meals which non-vegetarians will eat when visiting here are Enchilada

Bake, made with beans, tortillas, cheeses and enchilada sauce (it might be in

the file, if not, I'll see if I can track down my recipe) and Spinach and

Mushroom lasagna (spinach, sauteed mushrooms, Bechamel sauce, cheeses).

 

One thing. I absolutely forbid you to beat yourself up if you end up having

meat. OK?

 

Second thing - look at the incredible number of different kinds of beans,

grains, vegetables and peas which we have to choose from. Then look at the

different kinds of meat you have to choose from. Hmm...lots more in the veggie

world to choose from.

 

It's a great journey you have started. Jeanne in GA, vegging out for going on to

24 years now and STILL finding veggies and dishes I haven't tried yet!
