Lime Cheesecake Pie

This recipe came from an old 'Taste of Home' magazine - it never

lasts long around here!

LIME CHEESECAKE PIE

 

8 ounces cream cheese

14 ounces sweetened condensed milk

1/3 cup lime juice

1 1/2 teaspoons vanilla extract

1 graham cracker crust (8 inch)

8 ounces frozen whipped topping -- thawed

 

In a mixing bowl, beat cream cheese until smooth. Add milk, lime

juice and vanilla; beat until smooth. Pour into the crust.

Refrigerate for 2 hours.

Spread with whipped topping; refrigerate 1 hour longer. Garnish with

lime slices and mint (optional).

You know, I love those Taste of Home magazines.

I used to get them, but instead opted for the yearly

cookbook collection of all the recipes. Even though

they are full of meat recipe for omnivores, I find so

many recipes I can adapt and sub out ingredients to

make my own veggie versions of good old home cooking.

They are a great source of inspiration.

 

Thanks for this pie recipe. My Grams gave me a

Borden's Sweetened Condensed Milk dessert cookbook

she got once from sending in can labels. That is full

of no-bake cheese pie desserts like this one.

Really yummy stuff. :)
