Does anyone know of a similar Vegan recipe or know of ingredients that will serve the same purpose as the eggs, milk and ch**n broth? SQUEEZE NOODLES http://www.thriftyfun.com/tf53090323.tip.html 2 eggs 1 tsp salt 1 C milk 2 C flour soup broth Beat eggs & blend in milk. Add dry ingredients & mix well. Pour into a plastic ketchup bottle. Pour broth into pan & bring to a rolling boil. Keep at rolling boil while you squeeze noodle mixture into broth. Amount depends on size of noodles you want. Noodles will float to the top as you still put more mixture in broth. They will cook quickly; test for tenderness w/fork. I'm not a Vegan but I've heard of using soft tofu as a substitute for eggs in recipes. I suppose you could try a bit of soft tofu mashed to substitute for the eggs and soy milk to substitute for regular milk. Mixed with the flour it *might* meld together enough to stay in a " noodle " as it cooks in the broth. A thickener such as kuzu or cornstarch could help if necessary. It strikes me that depending on what you intend to serve with these " noodles " that they might be a little bland. I'd suggest if that turns out to be true that you add onion salt instead of the regular salt or a little of another seasoning that you like.
