Guest guest Posted January 7, 2009 Report Share Posted January 7, 2009 Spanish Chickpeas and Vegetarian " sausage " Serves 4 to 6 This Spanish-influenced dish is equally good using canned chickpeas or ones you've cooked yourself. Serve it as an appetizer with pieces of crusty bread on the side. Ingredients 2 tablespoons extra virgin olive oil 1 small onion, thinly sliced 1 pkg. of Morning Star Farms breakfast links 2 cups (cooked) chickpeas, drained and rinsed Salt to taste Method In a large sauté pan, heat olive oil and sauté onion until golden. Add sliced breakfast links and cook briefly, stirring to get the flavor from the breakfast links. Add the beans and cook another 5 minutes. Season with salt to taste.
