Guest guest
I have a few funky bananas I need to use up. This is one of my favorite banana bread recipes. Chocolate Banana Bread 1/2 cup butter or margarine, softened 1 cup sugar 2 eggs 1 cup mashed ripe bananas (about 3) 1/4 cup soy milk 1 tsp vanilla extract 1 1/2 cups all-purpose flour 1/2 cup whole wheat flour 1/4 cup baking cocoa 1 tsp baking soda 1 tsp salt 1/2 cup chocolate chips 1/2 cup chopped walnuts (optional) In a mixing bowl cream the butter with the sugar. Add the banana, eggs, soy milk, and vanilla; blend well. In another bowl, sift together the flours with the cocoa, baking soda and salt. Combine with the banana mixture until well blended and smooth, then fold in the chocolate chips and walnuts if desired. Transfer to a greased 9x5x3 inch loaf pan and bake at 350 degrees for 60 to 65 minutes, or until a toothpick inserted in center comes out clean. Cool for 10 minutes before removing from the pan to cool on a wire rack. Yield: 1 loaf ~ PT ~ It is just like man's vanity and impertinence to call an animal dumb because it is dumb to his dull perceptions. ~Mark Twain
Guest guest
I made this last night and it was a big hit. I didn't have any soymilk, so I used cow's milk. Great recipe! --- ~ PT ~ <patchouli_troll wrote: > I have a few funky bananas I need to use up. > This is one of my favorite banana bread recipes. > > Chocolate Banana Bread > > 1/2 cup butter or margarine, softened > 1 cup sugar > 2 eggs > 1 cup mashed ripe bananas (about 3) > 1/4 cup soy milk > 1 tsp vanilla extract > 1 1/2 cups all-purpose flour > 1/2 cup whole wheat flour > 1/4 cup baking cocoa > 1 tsp baking soda > 1 tsp salt > 1/2 cup chocolate chips > 1/2 cup chopped walnuts (optional) > > In a mixing bowl cream the butter with the sugar. > Add the > banana, eggs, soy milk, and vanilla; blend well.
