It claimed " grand champion " in a Heart Healthy Contest in a local fair one year. However it had an ingredient I would not use, such as cream of chicken soup, so I altered it to fit my vegetarianism, and it tasted great. Creamy Broccoli Casserole 2 packages (10 oz. each) frozen chopped broccoli, thawed and drained 1 can (10.75 oz.) condensed low-fat cream of mushroom soup, undiluted 2 tsp lemon juice 1/2 cup crushed seasoned stuffing mix 1 Tbs soy margarine, melted 1/4 cup reduced-fat shredded cheddar cheese Place the broccoli in an 8-inch square baking dish coated with non-stick cooking spray. Combine soup and lemon juice; pour over broccoli. Toss stuffing and margarine; sprinkle over soup mixture. Cover and bake at 350 degrees for 25 to 30 minutes. Uncover; sprinkle with cheese. Bake 5 mintues longer or until cheese is melted.
