Just to get started, here's a recipe for simple vanilla icing (when you don't have much on hand). I love icing... 3 cups powdered sugar 1 stick non-dairy butter (Earth Balance, etc.) 1/2 teaspoon vanilla 1/4 cup non-dairy milk, best it if it is plain Warm up the butter a little then place in medium sized bowl and mix until it is smooth and creamy. Add the milk. Add the powdered sugar a little bit at a time( about 1/2 cup), stirring completely before adding again. Add vanilla. Mix completely, then taste. Adjust to taste (this part is important, because people like their icings different--some want thinner ones-add more milk-some like thick-add more butter/sugar-some like a lot of vanilla).
