It is delicious and reminds me of scones. This is so quick and easy to make. Swedish Coffee Cake 2 eggs 1 c. sugar 1 c. flour 1 t. almond flavoring 3/4 t. vanilla extract 1/2 c. butter Additional flour Cinnamon Slivered Almonds Place eggs in a mixing bowl and beat. Add sugar, flour and flavorings and beat well after each addition. Melt butter in a 8-in iron skillet. Add melted butter from skillet to batter and mix well. Sprinkle the flour in the iron skillet used to melt the butter and pour the batter into it. Sprinkle with slivered almonds and cinnamon. Bake at 350 degrees F, for approximately 30 minutes. I did and added some zest of an orange and it is even better.! I cut up some sweet potatos into steak fry size and tossed with a little oil and salt and cinnamon and spread out on a cookie sheet to bake on another shelf at the same time, to go with our dinner also. I made another one to go with dinner last night, as my family asked me to. They love this new recipe and last night I added the zest of one navel orange and it was even better. The almond extract along with the vanilla extract gives it great flavor and those crunchy slivered almonds is a nice too.
