My husband will be taking a platter full to work tomorrow to share with his co-workers. I think I'll take some by the health club tomorrow for the employees to enjoy. You can find the Toffee Bits on the baking isle beside the chocolate chips. Merry Christmas season, Judy Oatmeal Toffee Cookies 1 c. (2 sticks) butter, softened(we used Smart Balance Light spread) 2 eggs 2 c. light brown sugar 2 t. vanilla extract 1 3/4 c. all purpose unbleached flour 1 t. baking soda 1 t. ground cinnamon 1/2 t. salt 3 c. quick cooking oats 1 1/3 c. (8 oz) Heath 'O Bits Brickle Toffee Bits 1 c. shredded coconut flakes(optional) Heat oven to 375 degrees. Spray cookie sheet with Pam or similar product. Beat butter, eggs, brown sugar and vanilla extract in large bowl until well blended. Add flour, baking soda, cinnamon and salt. Stir in Oats toffee bits and coconut with a spoon. Drop dough by rounded spoonfuls 2 inches apart onto prepared cookie sheet. Bake 8 - 10 minutes or until edges are lightly browned. Cool 1 minute and then remove to wire rack. Cool completely.
