Guest guest Posted December 2, 2008 Report Share Posted December 2, 2008 Well, the melding of our High Tea for Thanksgiving and the last minute " BTW Mom can you make Thanksgiving dinner here " when I had thought they were going elsewhere, went well. The food was put on the table and disappeared. Four adults and two almost teen boys devoured 4 DOZEN deviled eggs. That's whole eggs, not 48 halves. I got a half. I ended up making 5 large pots of tea and every crumb of sweeties went so fast I almost didn't get a lemon bar. Carl and I was certain that we would be the only one who would eat the cucumber sandwiches, so I only brought 16 of them (quarter slice bread, etc). They also were sucked down. I swear it was a swarm of locusts! Everyone's particular favorite was made and Brandon ate almost half the pan of his favorite cheese and corny corn muffins. Jarod tried to hide the big bowl of banana pudding in his room, but ended up sharing. The big casserole of broccoli souffle that really isn't a souffle went well and I ate a lot more than I should have of Kimmie's green bean casserole. She doesn't cook, but I love her casserole and it makes her feel good to see the dish empty. Thank heavens we did this. Kimmie works so hard and our son is not doing well, so we made sure they had lots of leftovers (and surprises) in the refrigerator and gas in the car. The only thing they had in the house to eat was Ramen noodles and a couple cans of Rico cheddar cheese sauce/dip with peppers. By the end of the night she had a blinding migraine so I made her a cup of mildly spiced apple cider and made her take off her shoes and snuggle on the couch. I also loaded the dishwasher and wiped up the kitchen, putting food and stuff away so they didn't have to do it next year. Think I'm kidding? HA, wish I wasn't. Ah, the unbaked fried potato skins. I used red potatoes for the mashed potatoes and peeled them first. They couldn't find the peeler or a paring knife so I ended up doing it with a chef's knife. The skins were a lot thicker than I'd normally have cut, but that worked out rather well. So I put two pots of oil on the stove. Sounds crazy, but it works for frying normal french fries. We fried in one pot, finished frying in the other, which made them crispier so the skins were nice and cooked inside and crisped outside. After draining and letting the oil drip onto paper towels, I arranged them on a couple of large plates and heated a can of the cheddar cheese and poured it all over. That was also devoured and I did get to eat a couple. I love recipes that use everything. So there's the recipe-ish for the potatoes. If we'd had fried the Beast, I'd have just popped them into a frying basket after the Beast had been removed, and cook them there. I hope everyone had a happy Thanksgiving and if you lived where Thanksgiving isn't celebrated, then I hope you had a happy Thursday! There *is* something mysterious about deviled eggs that compels us to eat them until gone. A co-worker makes a cereal snack like that I refer to as " crack Chex " for its addictiveness. What a joy to be able to whip up a special dinner on a moment's notice. Congratulations on creating a memorable holiday for your family!
