I think it goes back to the days when I worked full time and also had a family to feed. Sunday was the only day I had to prepare meals for the week. Even though it's just the 2 of us, I get inspired to cook on Sunday morning. I made the famous Chickpea Cutlets. DH is leaning toward being a vegetarian and said he could eat them with horseradish piled on them. that's almost a waste of a great tasting cutlet to me but I'll give him one of them. The rest will be hoarded for me. I could just pick one up in my hand and eat it. It's my all time favourite. I made the famous Lentil Loaf for the first time. I'm not a ketchup fan but DH is so I thought this might appeal to him. He thought it tasted great until I put a slice on his plate for lunch and he says now that maybe he'll stick to the chickpea cutlets. Not a chance!!! He's going to find lentil loaf on his plate now and then and he can have horseradish with it if he needs it. I made a batch of Cranberry sauce for the freezer. We eat a lot of it with faux chicken products. this afternoon, I decided that my mouth was watering for the Hearty Barley Bake - is that a Donna recipe? I love it. It's in the oven cooking and I have carrots and parsnips ready to go in to roast when the casserole is almost done. What a great day!!! I was going to do some seitan too but have decided that I need to sit and relax with a glass of wine before supper. I sometimes have to chase him away from eating my favorite veg foods, too! *lol* Not that I wouldn't be delighted if he went vegetarian and joined me eating this way all the time. I try to lure him with new dishes but he's a bit of a stick in the mud and doesn't like new things often. He says that he was a vegetarian for years when he was younger but what he means is that he ate a diet of only fruit and vegetables and was on what he called a mono diet. He ate only carrots for a day and then only oranges for a day. In fact he ate so many carrots and oranges that his skin turned yellow. He went back to meat at that time. He just can't seem to grasp the idea of a wide range of veggie options that mean you are having a balanced diet. I love my veggie food!!! It all tastes great to me . He would never ever grab anything of mine. I have to prepare it and put it on a plate for him to cover in horseradish, gravy, ketchup or cranberry sauce. To me the sauces defeat the purpose of preparing a delicious dish. Of course I never ate gravy, ketchup or horseradish when I was a non-vegetarian. I like my food simple and I like to taste what I'm eating. When I eat potatoes, I like nothing but salt and pepper on them. I love a good potato. I guess I'm as fussy as he is in my own way. I just hate to waste a good chickpea cutlet under a layer of horseradish after the trouble of making it. I need to let go of the cutlets and not try to control how he eats them but it's hard. Maybe someday he'll let up on the sauces. right now he's just as happy with a piece of fish so that may be what he gets while I eat the 2 cutlets that are left. The lentil loaf is another story.
