Blue Cheese Romaine Salad

 

1/2 c. Pine Nuts

1 T. Butter Melted

6 c. torn Romaine lettuce

3/4 c. crumbled Blue Cheese

2 med. apples or pears , diced

 

Lemon Vinaigrette

1/3 c. lemon juice

1 T. brown sugar

1 garlic clove, minced

1/4 t. salt

pinch of pepper

1/2 c. olive oil

 

Combine the pine nuts and butter and spread on a baking sheet. Bake for 350

degrees F. for 4-6 minutes until golden brwon, stirring once. Cool.

 

In a large mixing bowl, combine the romaine lettuce and blue cheese. Add

apples and pine nuts.

 

In a food processor or blender,combine the lemon vinaigrette ingredients,

except the oil and process until smooth. While processing gradually add

oil in a steady stream. Drizzle ove the salad and toss to coat. Serve

immediately.
