No one believes it's squash and it makes 2 loaves. One for you and one to give to a friend. Butternut Squash Bread 2 cups mashed cooked butternut squash (I cut in large chunks and steam) 1 cup canola oil 2 cups sugar 3 eggs beaten 1 tsp. vanilla 3 cups flour 1/4 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 2 tsp. cinnamon * optional 1 cup chopped pecans or walnuts Preheat oven to 350 degrees, and grease two 8 1/2X4 loaf pans. In large mixing bowl combine, squash, eggs, sugar, vanilla and oil, and blend. In a separate bowl mix all the dry ingredients (except walnuts) and add to the wet ingredients. Stir until just combined. Fold in nuts. Pour into prepared pans and bake until toothpick inserted comes out clean. 60 minutes. Cool 10 minutes on wire rack. Remove from pans and continue cooling on wire rack. " I guarantee you, this place will blow your mind. The kids loved them (and they are PICKY). I can't even believe they tried them, knowing they were made from butternut squash. But they smelled so good they couldn't resist!
