Guest guest Posted October 24, 2008 Report Share Posted October 24, 2008 These are really good, and this is a recipe I have made several time from the Vegan Planet cookbook. I think the first time I made them I over-worked the dough and the last few were too tough. Just treat the dough gently and the results will be flakey, light, delcious biscuits. Pumpkin Biscuits 2 cups all-purpose flour 1 Tbs baking powder 1/4 tsp salt 1/2 tsp ground allspice 1/4 cup canned pumpkin 1/2 cup soy milk or other dairy-free milk 3 Tbs corn oil 1 Tbs pure maple syrup Preheat the oven to 450 degrees. Lightly oil a baking sheet and set aside. In a large bowl, sift together the dry ingredients. In a smaller bowl combine the moist ingredients and blend together until smooth. Combine both mixtures together, stirring until the dough is just mixed and hold together. Transfer to a lightly floured surface and roll out to about 1/2 inch thick. Using a biscuit cutter or small drinking glass, cut the dough into 2-inch rounds and place on the prepared baking sheet. Reroll dough scraps and cut out more biscuits.
