Guest guest Posted October 24, 2008 Report Share Posted October 24, 2008 I don't often purchase premade food but since both of us love sweet potato fries and we hadn't planted any this year, I picked up a bag of Alexia julienned sweet potato fries. (go to alexiafoods dot com to see) Last night I fried them in a little peanut oil, drained and patted dry with paper towels, but they could have been done in the oven without oil. They were incredibly good, needed no extra salt and were crispy outside, flavorful and quickly prepared. The down side is that the husband person ended up swiping them from my plate when he finished his! The pig. These are worth buying again. Dinner last night was one of those no brainer, little prep meals all done from home canned or commercially canned foods in storage and the frozen sweet potato fries. We had collard greens (Martha Holmes - actually very good), sweet potato fries, black eyed peas and green beans. Dessert was a quart jar of home-canned peaches. Other than frying the sweet potato fries, all I had to do was open cans or jars and dump in a pot for heating. There are a couple of cafes around town here that serve them as a side now, and they are so good dipped in garlicky ranch!
