Turnip Greens and Roots 1 rubber bandered bunch of greens, contains several plants with many turnip roots still attached. I fill up my double sink with water and wash in one sink, put them in the other one full of clean fresh water. Drain the first sink and refill with fresh cold water and wash them for a 3rd time. You really need to wash greens at least 3 times to ensure that you remove all dirt grit from them. If you find any dirt in your 3rd washing water after you remove the greens then you need to wash another time in fresh water. This is VERY IMPORTANT!. Nothing like dirt grit to ruin a pot of greens. I then dice up the greens and turnip roots on a cutting board. I spray my wok with some cooking spray and heat. Add the greens without adding any water. There will be enough still clinging to the leaves from washing them. Add some salt. Cover your pan with a large pot lid. Stir often. If you can't fit all the greens in your pan at first, add more, as soon as the greens shrink in cooking process. This is a steaming process. I also spray the greens with some cooking spray at the begining of cooking them. It adds a nice flavor without the added calories of oil. I use Smart Balance cooking spray. When greens and roots are tender and you still have bright green remove the lid and serve. These cook up in about 10 minutes. It is so good, with some lima or speckled butter beans, a slice of cornbread, and some meatless Worthington Choplets, Tender Bits, or Skallops that you bread in Italian Bread Crumbs(add a little Ms. Dash and salt to bread crumbs) and fry up crisp.
