Guest guest Posted October 10, 2008 Report Share Posted October 10, 2008 tomatillo-chipotle salsa i made this smoky and kind of tart salsa last night and my hubby really enjoyed it. this isn't an exact recipe, so adjust ingredients to taste. tomatillo-chipotle salsa tomatillos (8 to 10 medium size), husked and rinsed, quartered 2 cloves garlic 1 small onion, sliced thickly 1 to 2 chipotle(s) (in adobo sauce) juice from 1/2 a lime cilantro, chopped (to taste) salt in a hot(on medium-high), dry skillet (cast iron works well) roast garlic, onion slices, and quartered tomatillos, turning with tongs often until ingredients are blackened in spots and the garlic and tomatillos are soft. place in food processor or blender along with chipotles and lime juice and blend to desired consistency. you may add a little bit of water to thin the salsa. season with salt and stir in chopped cilantro.
