Guest guest Posted October 10, 2008 Report Share Posted October 10, 2008 FESTIVE CORN SALAD Ingredients: 3 c. frozen corn, thawed 1 c. tomato, chopped 1 avocado 1 tsp. olive oil (optional) 1/4 c. cilantro, chopped salt to taste Directions: 1. Combine corn, tomato, olive oil, cilantro & salt in a bowl. 2. Cut the avocado in halves; remove the pit and carefully scoop out the pulp. 3. Cut the pulp in cubes and gently fold into salad.
