QOTW: What is for dinner?( with recipe)

Dinners for the week are going to be rather simple.

Monday: Baked beans (from dry Navy beans), Brown bread, macaroni salad

Tuesday: Stir fry veggies with Crispy Noodle Cake (recipe at the end of the

e-mail

Wednesday: Everything but the kitchen sink veggie soup, French bread, Spice cake

with cream cheese frosting

Thursday: Red beans and rice, collards, Brandon's corn muffins (with corn,

cheese, jalapeno and sweet red peppers)

Friday: Tossed salad with leftover cooked red beans, tiny tomatoes, celery,

onion, pickled baby corn, cucumber, black olives, diced peppers, whatever else

is left in the fridge

Saturday: bunch of beans chili layered with cheese, shredded lettuce, salsa,

guacamole, sour cream and chopped green onions served with fried corn tortillas

Sunday: squash and stuffing casserole, Italian style green beans, sliced

tomatoes on lettuce

Monday - Deep dish pizza with mushrooms, black olives, lots of cheese, Italian

sausage TV and onions

 

Plan in advance - yes, with back up plans for if I'm unable to cook

 

Try new recipes - yes but not as often as I'd like.  Carl likes the tried and

true meals I've made for the past 40 plus years. Noodle cake is the newest

recipe I've tried and we love it.I make it a little differently every time,

sometimes adding lots of veggies, sometimes just a little chopped chives.

 

Noodle Cake

12 ounce package spaghetti, cooked, drained and cooled (leftover works great)

Extra virgin olive oil

Chopped green onions, sauteed

Soy sauce, tamari, whatever (optional)

 

In a large skillet, saute chopped onions. Add cold spaghetti, toss with a little

soy sauce. Turn the heat down and let crisp well on the bottom. Put a plate over

the noodles and flip over. Let the top (now bottom) crisp. Remove to plate and

cut into wedges to serve.

 

There are many recipes for noodle cake out there. Often I've tossed in a handful

of chopped bok choy or salad mix, julienned semi-cooked carrots and red sweet

peppers. Worth making and a great use for left over spaghetti.
