Carl likes the tried and true meals I've made for the past 40 plus years. Noodle cake is the newest recipe I've tried and we love it.I make it a little differently every time, sometimes adding lots of veggies, sometimes just a little chopped chives. Noodle Cake 12 ounce package spaghetti, cooked, drained and cooled (leftover works great) Extra virgin olive oil Chopped green onions, sauteed Soy sauce, tamari, whatever (optional) In a large skillet, saute chopped onions. Add cold spaghetti, toss with a little soy sauce. Turn the heat down and let crisp well on the bottom. Put a plate over the noodles and flip over. Let the top (now bottom) crisp. Remove to plate and cut into wedges to serve. There are many recipes for noodle cake out there. Often I've tossed in a handful of chopped bok choy or salad mix, julienned semi-cooked carrots and red sweet peppers. Worth making and a great use for left over spaghetti.
