Guest guest Posted October 3, 2008 Report Share Posted October 3, 2008 I would add crumbled feta right before serving so that it halds its shape and doesn't turn to mush in the marinade. This salad is always a hit at potlucks. I usually skip the sugar though unless my onions are not a sweet variety. Cucumber Tomato Salad 2 large cucumbers, diced (peeling optional) 2 large tomatoes, diced 1 medium green pepper, diced 1 medium onion, diced 1 bottle (8oz) fat-free Italian salad dressing Sugar substitute equivalent to 2 tsp sugar In a bowl, combine the cucumber, tomato, onion, and pepper. Combine salad dressing and sugar (or substitute); pour over vegetables. Toss to coat. Refrigerate for at least 1 hour, best if overnight. Serve with slotted spoon.
