BillSF9c Um, Bill, that is gluten, and I use a readily available product from Bob's Red Mills called Vital Gluten Flour to make my meatless " meat " . Some of the few weeds I eat are dandelions, cleavers, stinging nettles, chickweed. I harvest dandelion seeds and plant in several shallow dishes in the house in winter so I can harvest the baby plants when they are about a big around as a silver dollar. Greens are wonderful stirfried or added to soups. Cleavers are different -- they feel like a super micro velcro on your tongue but taste fresh and green and they are a bit juicy too. Nettles can be used for cooked greens, or tea -- the leftover tea can be used as a nice hair rinse too. The seeds of these can be harvested for scattering in places they like to grow. Chickweed is great for a tea or salad addition but mostly I just nibble, nibble, nibble. I grew up learning how to make gluten from whole wheat flour but now I 'cheat' buy the flour that I add broth to in order to make the gluten and use the same or sometimes a different broth to simmer the gluten in. Lately I have been using my large oval slow cooker to simmer the gluten over night since I am making a large 'roast' size instead of smaller 'cutlets' from it. The roast can be sliced for sandwiches if desired or it can be lightly browned in a skillet with your preferred fat and eaten like a steak. Simple, easy and way cheaper than meat for certain. Once I was asked why I eat vegetarian -- simple for me -- I don't like the way meat smells or tastes. Sorry folks, not a political reason and not an 'ethical' or 'moral' reason.
