One of my daughters made this last night and it was so easy to make, looks

beautiful and tasted delicious.

It is much easier to make than the the traditional method and tastes just as

good. We used some raw peanuts with the skins on in this recipe.

This recipe is a keeper.

Microwave Oven Peanut Brittle

 

1 1/2 c. peanuts

1 c. sugar

1/2 c. light corn syrup

1 T butter (we used Smart Balance Light Spread, which is vegan)

1 t. vanilla extract

1 t. baking soda

 

Grease a baking sheet and set aside. In a glass bowl, combine peanuts,

sugar, corn syrup and salt. Cook in microwave for 6-7 minutes on high:

mixture should be bubbly and peanuts browned. Stir in butter and vanilla

and cook 2-3 minutes longer.

 

Quickly stir in the baking soda, just until mixture is foamy. Pour

immediately onto prepared baking sheet. Let cook for 15 minutes or until

set. Break into medium size pieces and store in an airtight container.

Yeilds 16 servings..
