It is much easier to make than the the traditional method and tastes just as good. We used some raw peanuts with the skins on in this recipe. This recipe is a keeper. Enjoy, Judy Microwave Oven Peanut Brittle 1 1/2 c. peanuts 1 c. sugar 1/2 c. light corn syrup 1 T butter (we used Smart Balance Light Spread, which is vegan) 1 t. vanilla extract 1 t. baking soda Grease a baking sheet and set aside. In a glass bowl, combine peanuts, sugar, corn syrup and salt. Cook in microwave for 6-7 minutes on high: mixture should be bubbly and peanuts browned. Stir in butter and vanilla and cook 2-3 minutes longer. Quickly stir in the baking soda, just until mixture is foamy. Pour immediately onto prepared baking sheet.
