Before I responded to your post I had just read something where a woman had stated that she saves the sprinkles from her " healthy yogurt " (the kind with artificial colors and flavors and no probiotics....definitely not healthy). Generally, people have a distorted idea of what is healthy. Advertisers throw healthy sounding terms around all the time (describing products that aren't healthy at all) and it really affect what people think is good for them. As a teacher, I'm disgusted on a daily basis by what parents put in their children's lunches. One of the worst is the Lunchables....processed, nitrate, preservative filled lunch meat, processed American cheese, crackers, candy, and a fruit flavored, high-fructose corn syrup sweetened drink. I have parents who bring in fast food for their children. In my opinion it's almost child abuse. So, as you can tell....I'm a little obnoxious when it comes to food. I just want you to know that my response was not personal and I didn't mean to make you feel guilty or anything. I have used cake box mixes on occasion...knowing full well they are not good for me and my family. I will rephrase to say " it may be less un-healthy " to use a diet soda as a replacement for the oil and eggs. You can also use a low-sugar cake mix. Monday, September 8, 2008, 1:52 PM You can omit the oil and eggs from the cake mix. If you are making a dark cake (like chocoloate) add a can of coke zero or diet coke.
