Don't salt the big limas!

I personally don't like tough lima beans, so I wait until it's all properly

mushy and soft--then you can see why the other name is butter beans.  They're

especially good with cornbread.

I would never add salt to keep them chewy while cooking, but I do add a lot when

it's time to eat them.
