We both take our lunch everyday and we need new ideas for healthy, tasty lunches. I love taking colorful veggies and fruits and healthy foods in my lunch because my students always want to know what I'm eating and it's a teaching opportunity (nutrition, vitamins and minerals, where food comes from, etc). I had a seaweed salad addiction last year and the kids were just tickled when i would eat seaweed with chopsticks. One of the moms came in and said her daughter said Ms. Susie eats seaweed and I responded, " I do! " Perfect opportunity to educate parents as well....it's amazing how some people eat. They have never had their minds open to all the wonderful and diverse foods out there. I ramble..... Anywho, any great lunch ideas?
