I got the recipe from this blog: http://blog.fatfreevegan.com/2007/09/vegan-omelette-for-one.html They were really easy to make. It takes a while to cook them, so be prepared to wait about 10 minutes for each omelette. But they look very much like the eggy things and tasted very much like scrambled tofu. Yum!
