My Favorite Grilled Vegetable Sandwich ~ a recipe of sorts...

I just love simply grilled vegetables (as opposed

to highly seasoned or marinated vegetables).

A few times a week, I'll grill a whole mess of vegetables.

Some veggies we eat as a side dish and then refrigerate

the rest for the best sandwiches.

 

Here are my favorite veggies to grill for sandwiches:

 

Zucchini

Yellow Summer Squash

Bell peppers

Portabella mushrooms

Eggplant

Peanut oil to brush the vegetables with

Good bread ~ flavorful, chewy

Optional~ crumbled goat cheese, or sliced cheeses

Optional~ Balsamic vinegar for sprinkling

 

 

First, cut the vegetables into slices.

Toss them all in peanut oil.

Generously season with salt and pepper.

Next, I grill them over high heat in my wire mesh

grill pan, shaking them to flip the veggies until they

are starting to brown and are cooked evenly.

 

Layer the vegetables between slices of bread,

adding cheese and sprinkling with balsamic vinegar

if desired. :)
