You can use a meat sub, but just as good without. Kidney beans, olives, green peppers, corn, tomatoes with a cornbread topping. Make it nice and soupy the way my grandma did. I have made some with lentils, carrots, and the vegetables we have in the house. I never tried kale in a soup before.
