However, I am not only a vegetarian of several years, but also a cook by profession. One of my favorite dinners is to make a soup of fresh vegetables like potatoes, celery, onion, maybe a fresh tomato (peeled please) and some greens like kale or bok choy. I put a little vegetarian soup base in and some Italian herbs to flavor it up good. When the veggies are tender I add a can of white beans, like Great Northern. Serve with a big chunk of good Italian bread and if you are lacto, maybe a wedge of good cheese. Yumm, and easy. I have made some with lentils, carrots, and the vegetables we have in the house. I never tried kale in a soup before.
