Guest guest Posted July 10, 2008 Report Share Posted July 10, 2008 Curried Cauliflower Soup Prep Time: 45 minutes or less Special Considerations: Lacto-Ovo Vegetarian Servings: 4 – 6 Ingredients: 3 Tbs. Butter 1 Small Cauliflower head, cut into small pieces 1 Green Pepper, chopped 1 Large (or 2 medium) Onion, chopped 1½ tsp. Turmeric ½ Tsp Curry powder (or to your own taste) 2½ c. Vegetable stock 1½ Tbs. Flour 1 c. Milk 1 c. Plain Yogurt Parsley, chopped Directions: Heat butter in sauce pan and sauté the cauliflower, green pepper and onion 3 – 5 minutes. Add turmeric and curry; mix well. Add vegetable stock; bring to boil. Reduce heat and simmer covered for 20 minutes. In a small bowl, add flour to a little of the milk; stir well. Add remaining milk. Add milk and flour mixture to soup; stir. Continue simmering 10 minutes, stirring constantly. Stir in yogurt and serve garnished with parsley.
