Guest guest Posted June 27, 2008 Report Share Posted June 27, 2008 Hi everyone, I just joined recently. I live in a town of 90k primarily made up of `meatatarian's, as my 3 year old son would say. There are NO veggie choice restaurant for us to go to and I find it difficult to shop in a town with four small shelves in the grocery store dedicated to soy products. Our choices are very limiting. So, what we have learned to do is ask cooks, to make something special for us using the ingredients we pull out of a meal from the menu, when dining out. Needless to say, we do not get to eat out a lot unless we go for Pizza, it seems to be the safest thing to eat without the concerns of `meat poisoning'. At home we have learned to be quite creative, as I think all veggie lifestyles learn to be. My favorite Bulgur wheat salad recipe is as follows, it was adapted from something I tasted, made by one of my veggie friends who did not pass on the recipe at the time. Bulgur wheat Dried cranberries Lemon juice Cumin Cilantro Sunflower seeds Soak bulgur wheat in vegetable broth until light and fluffy. Add lemon juice to taste, I usually put in up to a tablespoon of fresh squeezed. Keep some fresh cilantro on hand, it is better to add fresh with each serving than to put it directly in the salad, it goes bad fast. I put up to one teaspoon of cumin in. The trick is to lightly toast it in a dry pan first to bring out the flavor. Ad small amounts and keep tasting because it can over paower real quick. Add dried cranberries, or any other dried fruit to taste, papaya & raisins are a nice combo too. Orange zest and lemon zest are a good addition too. Add sunflower seeds, I prefer the salted, but my husband does not. Mix and eat as is. One thing I really like on the is OKA's miso salad dressing. I can only by it in Austin, so I do not have it year round and it is preservative free. The flavor combo with the dressing is quite divine.
