No matter what I add it always comes out great. Crock-pot Vegetarian Stew 1 large onion, diced 2 garlic cloves, minced 2 Tbs. olive oil 4 large carrots, diagonally sliced into thick pieces 1 large potato, cut into 1-inch cubes 1 large sweet potato, peeled and cut into 1-inch cubes 1 14-ounce can diced tomatoes 1 cup vegetable chic-like broth 1 teaspoon sea salt 1/2 teaspoon ground cumin 1/4 teaspoon cayenne pepper 1 can water-packed artichoke hearts, drained 1 16-ounce can chickpeas, drained In a saute pan on medium heat, saute the chopped onion and garlic in the olive oil. In the slow-cooker combine the carrots, potatoes, onion and garlic saute, tomatoes (with their liquid), broth, salt, cumin, and cayenne. Cook on low heat for 4 to 6 hours, or on high for 3 hours.
