If anyone does test them (I'm not a baker so it won't be me) perhaps let us know how turned out. - Joanna in Wash DC Poor Man's Cake 1 cup raisins, or any fruit desired 1 cup sugar ½ butter 1 hot cup water 2 cups flour 1 tsp soda 1 tsp allspice 1 tsp baking powder 1 tsp cinnamon ½ tsp nutmeg Combine raisins, sugar, butter and hot water in saucepan. Bring To a boil. When cool, add flour, soda, allspice, baking powder, cinnamon and Nutmeg. Pour into Bundt pan and Bake at 350 F until done. NOTE: one can use coffee instead of hot water, or fruit juice. All work very well and the cake is simple to make. Depression Cake 2 cups sugar 2 cups strong coffee ½ cup shortening 2 cups raisins 1 apple, peeled and grated 2 cups flour 1 tsp soda 2 tsps each cinnamon, allspice, cloves and nutmeg Simmer sugar, coffee, shortening, raisins and grated apple for 10 minutes. Blend in remaining ingredients. Pour into well greased and floured 13x9-inch pan. Bake at 350F for 25 to 30 minutes or until toothpick comes out clean. Cool and dust with powdered sugar. NOTE: 2 cups water may be substituted for the coffee. 1-1/4 cups sugar + 1cup molasses may be substituted for sugar. Mad Cap Cake 1-1/2 cups all purpose flour 3 tablespoons cocoa 1 cup sugar 1 tsp baking soda ½ tsp salt 1 tsp cider vinegar 1 tsp vanilla 5 tablespoons vegetable oil 1 cup applesauce Grease an 8- or 9-inch square or round cake pan. Sift flour,cocoa,sugar, baking soda and salt together into pan Make 3 depressions in dry ingredients. Pour vinegar into one, vanilla into the second and oil into the third one. Spoon applesauce over all. Mix until smooth. Bake at 350 F for 35 minutes. When cool, cut into squares. Top with coffee or vanilla ice cream or mounds of cool whip. Vinegar Cake From Hershery's cocoa cookbook 3 cups flour 2 cups sugar ½ cup cocoa 2 tsp baking soda 1 tsp salt 2 cups water ¾ cup vegetable oil 2 tablespoons vinegar 2 tsps vanilla Combine flour, sugar, cocoa, baking soda and salt in large mixing bowl. Add water, Oil, vinegar and vanilla. Beat 3 minutes at medium speed until thoroughly blended. Pour batter into greased and floured 13-x9x2-inch pan.
