Guest guest Posted June 9, 2008 Report Share Posted June 9, 2008 Mexican Potato and Veggie Sausage Quesadillas a.. 2 large potatoes a.. 1 box of Morning Star Farms - breakfast links a.. 16 oz can of Vegetarian refried beans a.. Cooking oil a.. Salt a.. Butter or margarine a.. shredded Monterey Jack or Manchego cheese a.. Add any other ingredients you may want a.. Peel the potatoes and cut them in small chunks a.. Boil the potatoes in water for 10 minutes or until cooked a.. Once the potatoes are ready, mash them and add salt and butter to taste a.. Keep potatoes warm at low heat a.. Heat the beans, keep them warm at low heat a.. Shred or dice the breakfast links very fine and saute in a frying pan, then keep at low heat. Stir in the refried beans. Spray a frying pan and lay out a flour tortilla. Heat on both sides. Layer the diced breakfast links/ bean mixture, potatoes, and cheese and lay another flour tortilla over this. Flip the entire tortilla when crisp on the bottom tortilla and crisp the top one. Cut like a pie and serve. Serve with salsa and sour cream if you desire.
