Mexican Quesadillas

 

Flour Tortilla's

Refried beans(heated)

Tangy Cheese Sauce Substitute - Vegan - *recipe below

Diced onions, bell peppers and jalopeno's

Diced tomatoes

 

Saute the onions, bell peppers and jalopeno's until tender in a little oil.

Set aside

 

Spray your frying pan with some cooking spray and heat to medium. Lay one

flour tortilla in the pan. Spread half with heated refried beans and the

other half with the tangy cheese sauce. Sprinkle the beans with some of the

onion/ pepper mixture and some diced tomatoes. Let it heat a little and

then fold the cheese side over the bean side. Flip over to crisp the

tortilla on both sides of the folded half circle. Enjoy

 

Tangy Cheese Sauce Substitute - Vegan

 

1 c. Water

2 T. Sesame Seeds

3 T. Nutritional Yeast

1/2 c. Pimiento

2 - 4 T. Lemon Juice

3/4 c. Raw Sunflower Seeds

1 1/4 t. Salt

1/2 t. Garlic powder or 1 clove minced

1/4 t. Rolled Oats

1/2 t. Dill Weed

 

Blend the oats and seeds until powdery. Add all other ingredients and blend

until very smooth.

Pour into a saucepan and heat until thick, stirring constantly.
