Guest guest Posted June 8, 2008 Report Share Posted June 8, 2008 I found this at the Knorr site and made it for lunch, using only part of the jalapeños and it was really good. Spicy Red Lentil Stew 1 tablespoon olive oil 2 medium jalapeño peppers, chopped 1 teaspoon cumin seeds 2 Knorr vegetarian vegetable bouillon cubes dissolved in 3 cups boiling water 1 cup red lentils, rinsed and drained 1 can (28 ounces) whole tomatoes, undrained, chopped 4 carrots, sliced 2 potatoes, peeled and diced 1 tablespoon curry powder 1 tablespoon lemon juice 1/2 cup frozen green peas 1 tablespoon fresh, chopped cilantro (I used a teaspoon dry) In 1-quart saucepan, heat Olive Oil over medium heat and cook jalapeños and cumin seeds, stirring occasionally, 2 minutes. Remove from heat and set aside. In 4-quart sauce pot, bring vegetable bouillon mixture, lentils, tomatoes with juice, carrots, potatoes, curry powder and lemon juice to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, 30 minutes or until vegetables are tender. Stir in jalapeño mixture and peas. Simmer, stirring occasionally, 5 minutes. Season, if desired, with salt and ground black pepper. Sprinkle with cilantro and serve, if desired, with hot cooked rice. SERVES 6 Quote Link to comment Share on other sites More sharing options...

Guest guest Posted June 9, 2008 Report Share Posted June 9, 2008 They have at least 25 veggie recipes, but some of their so called meatless recipes have meat in them and some good veggie products, like a vegetable soup mix that has carrots, onions, tomatoes, celery root, leeks, cabbage, cauliflower, green peas and potatoes - have to get another package to make sure it is totally vegetarian. I had a package of it and used it in rice with some cooked beans and it was good. But then I have not encountered a bean yet that I didn't like. I bought some of their chipotle bouillon cubes this week and put a couple into my pinto beans and it was really good. The bouillon does have MSG, it didn't make me ill, and I am sensitive to that chemical, so it cannot be a lot. Here's the link.
