This recipe is one of my favorites. I enjoy that it has yummy oats, chewy apricots, sweet bananas and crunchy pecans. Give it a try soon, you won't regret it. Pecan Apricot Bread 2 & 1/4 cups all-purpose flour 3/4 cup sugar 3/4 cup quick-cooking oats 1 Tbs buttermilk blend powder 1 tsp baking powder 1 tsp salt 1 tsp ground allspice 1 tsp ground cinnamon 1/2 tsp baking soda 3 eggs 1 & 1/2 cup mashed ripe bananas ( about 3 medium) 1/2 cup vegetable oil 3 tsp vanilla extract 1 cup chopped dried apricots 1 cup chopped pecans In a large bowl, combine the dry ingredients. In a mixing bowl, beat eggs, bananas, oil and vanilla. Stir into dry ingredients just until combined. Stir in apricots and pecans. Pour into two greased 8x4x2 inch loaf. Bake at 350 degrees for 45-50 minutes or until a toothpick inserted in center comes out clean. Cool for 10 minutes before removing from pan.
