I had all 3 gingers on hand and saw this recipe and had to try it. All I needed

was a box of cake mix. I never make desserts that aren't from scratch but I

thought, why not give it a try. They are delicious and easy too.

 

 

Triple Ginger Bars (Betty Crocker)

 

1 package Betty Crocker white or yellow cake mix

1/2 cup butter or margarine, melted (1 stick)

2 large eggs

1/4 cup chopped crystallized ginger

1 tablespoon grated fresh gingerroot

1 teaspoon ground ginger

2 tablespoons sugar or decorating sugar crystals

 

 

Preheat over to 350 degrees. Spray the bottom only of a 13x9 inch baking pan

with non-stick cooking spray. In a mixing bowl, stir the cake mix, melted

butter, and eggs until well blended.

Add in the next 3 ingredients; stir to combine. Press dough into the pan with

greased fingers. Sprinkle with sugar. ( I used turbinado sugar nice and

crunchy)Bake at 350° for 18-23 minutes or until the edges are light golden

brown. Cool completely. Cut into bars.

Yuou know, I share your opinion about making

goodies from scratch, but I have tried some of

the quick recipes in my Pillsbury cookies and

bars cookbooks, and they are all very good.

You would never know they were not from

scratch and you can't beat them for quick & yummy!

I sure will try this recipe. I bet it would be wonderful

if I used a spice cak mix, eh? :)
