Guest guest Posted May 29, 2008 Report Share Posted May 29, 2008 Swedish Scones 2 cups unbleached flour 1/4 cup sugar or raw sugar 1/8 teaspoon salt pinch of cardamom (optional but try to use it) 1 tablespoon baking powder 1 1/4 cups heavy whipping cream or use Silk brand soy creamer (see notes)* Favorite fruit (optional) With a wooden spoon, mix all ingredients until just wet. Don't over-mix. Add your favorite fruit to the amount you desire. These fruits work well, cranberries, crasins, raisins, diced strawberries, diced dates,or blueberries. Freeze fruit before adding to the dough mixture, it stays whole and won't bleed into the dough. Take half the dough and knead 4 times on a lightly-floured surface. Shape into a flat circle and cut into 8 pie shapes. Place pieces on a cookie sheet with a silpat or parchment paper. Brush triangles lightly with cream or soy creamer and sprinkle with sugar. Bake at 350° until bottoms are golden brown. Could be 10 minutes to 15. Check on them as they bake. *NOTE- Cream and soy creamer are thick so if you use whole milk or soy milk only use 1 cup.
