Guest guest Posted May 22, 2008 Report Share Posted May 22, 2008 This recipe was a treasure I found in a cute kid's cooking cookbook that encouraged younger kids to bake homemade treats and stuff for inspired lunchboxes. I just love this recipe. They make awesome after-school snacks, picnic take-alongs or just for something special to eat with some soup. I hope you find time to try this recipe. Pepper-Corn Crackers 3/4 cup all-purpose flour 3 cups corn flakes cereal 1/4 tsp baking powder 2 cups grated cheddar cheese 1/2 cup magarine 1/2 cup finely diced red pepper Paprika to sprinkle 1. Preheat oven to 350 degrees. Combine flour, cereal and baking powder with a mixing spoon in a bowl. Add the cheese; stir well. 2. Cut in the margarine with a pastry blender until the mixture looks crumbly, with pieces no bigger than the size of a small pea. The mixture should almost want to stick together. 3. Work with your hands until a stiff dough forms. Work in the red pepper. 4. Shape the dough into 1 inch balls. Place balls on the ungreased cookie sheet. Make crisscross pattern with a fork on top of each ball while gently pressing down. Sprinkle with the paprika. Bake in the oven for 15 minutes until golden brown. Cool completely.
