Guest guest
Here is another hot weather favorite. My mom's best friend turned Mom on to these delicious cold bites when I was a kid, but I never got her recipe, and back then I hated mushrooms! *lol* When I got older and my tastes evolved to being mushroom-crazy, it was too late to get Aunt Dianne's recipe. I was so happy to find this one in my Vegetarian Ananda cookbook; it is as close to Aunt Di's as I have found. Marinated Mushrooms 1/2 cup apple cider vinegar 1/2 cup olive oil 2 tsp. basil 2 tsp. marjoram 2 tsp. Dijon mustard 1 tsp. onion salt 1/2 tsp. garlic granules 3 dashed Worcestershire sauce [veg-safe] Pinch of cayenne 3 cups mushrooms Whisk first nine ingredients in a bowl and then pour over mushrooms. Refrigerate for 24 hours, stirring occasionally. Drain and serve as an appetizer, or leave in marinade and serve on crisp lettuce leaves as a salad. ~ PT ~ Let me never fall into the vulgar mistake of dreaming that I am persecuted whenever I am contradicted. ~ Ralph Waldo Emerson (1803-1882)
