Vegetable Rice Salad 1/2 cup uncooked rice 1 cucumber, seeded and diced 1 cup diced red bell pepper 3 green onions, chopped 1/4 cup grated parmesan cheese 1 tsp. dried basil [or 1 Tbs. chopped fresh] 1 tsp. minced garlic 2 Tbs. olive oil 2 Tbs. cider vinegar 2 Tbs. sour cream 1/2 tsp. Dijon mustard Cook rice according to package instructions; let cool. In a mixing bowl, combine cucumber, bell pepper, onion, parmesan cheese, basil, garlic, olive oil, vinegar, sour cream and mustard; mix well. Pour over rice mixture, toss to coat and chill.
