Guest guest
I grew up on these. They are one of my Mom's most requested recipes. I will post them in honor of Mother's Day! They are easily made vegan. Donna Cinnamon Fruit Oat Bars 2 cups rolled oats, not quick cook 1 cup flour 3/4 cup brown sugar 1/2 tsp. baking soda 1 tsp. cinnamon dash cardamom (optional) 3/4 cup butter or marg. melted 1/2 cup raisins, craisins, or chopped dates (even figs work) 1/4 cup of your favorite jam (any flavor, I like peach or strawberry) Powdered Sugar if you want to make a drizzle across the top (optional) Preheat oven to 350 degrees. Combine first 6 ingredients (7 if you use cardamom) and reserve one cup and set aside. Pat the mixture into a greased 9 X 9 square pan. Combine the raisins or other fruit if you use another with the jam, now toss with the remaining one cup oat mixture you set aside, and smooth over the top of layer in pan. Bake at 350 degrees for 23-30 minutes until edges are golden brown, take out of oven and give it a look. You don't want it too dark or it will become hard. It's still very tasty if it's hard. Let pan cook down a little, while it's still warm cut into squares. Make drizzle icing with powdered sugar and water, when it's thick but slowly drips from spoon, drizzle across top of squares. When icing sets, remove squares from pan. ______________________________\ ____ Be a better friend, newshound, and know-it-all with Mobile.
